Gammon in BBQ Sauce recipe

This simple BBQ gammon recipe uses ingredients you'll have readily available in the cupboard, such as ketchup, Worcestershire sauce and brown sugar. Because the ham is cooked in the sauce, it has a lovely deep smoky flavour that is difficult to match.

Ingredients:

  • 2 kg gammon joint
  • 1/2 small chopped white onion
  • 60ml tomato ketchup
  • 60ml cider vinegar
  • 2 tbsp. Worcestershire sauce
  • 2 tbsp. dark brown sugar
  • 1 tbsp. melted butter
  • 1 tbsp. white pepper
  • 1 400g tin cream of tomato soup

Method of Preparation:

  1. Place the ham into a pot of clean water and bring to the boil. Cook for one hour, skimming salt and fat off of the surface, then place into a casserole dish.

  2. Mix together the onion, ketchup, vinegar, Worcestershire sauce, brown sugar, melted butter, pepper, and tomato soup.

  3. Pour the mixture over the gammon joint and bake for one hour at 180C. Baste the sauce over the joint once or twice during cooking.

Pour any leftover sauce onto the gammon joint to serve. Use whichever brand of soup you have to hand - it's there to give a sweet tangyness to the sauce. This recipe serves six.
