Gammon and Sausage Paella recipe
This tasty paella recipe is perfect for those who don't like traditional seafood paella - it combines the yummy flavours of gammon with chorizo, saffron and paprika. Serve it with some crusty bread and a few slices of lemon to garnish.
Ingredients:
- 225g gammon steak, cut into cubes
- 2 chorizo sausages
- 300g paella rice
- 1 litre chicken stock
- 1 onion
- 2 garlic cloves
- 1 tbsp. smoked paprika
- Pinch saffron, dissolved in 1 tbsp. hot water
- 200 green beans
- Salt and pepper
- 1 tbsp. olive oil
Method of Preparation:
Finely chop the onion and mince the garlic cloves. Thickly slice the chorizo and take the tops and ends off of the green beans.
Heat the olive oil in a large pan and add the onion and garlic, stirring until softened.
Add the gammon and the chorizo, cooking for another two minutes to allow the chorizo flavours to run from the sausage.
Add the paprika and the rice and cook for another two minutes.
Stir in half the stock and the saffron. Season well and cook for around twenty minutes over a low heat. If it looks dry, add more stock. Stir in the green beans five minutes before the end of cooking.
Serve the paella as soon as the rice is tender and the liquid is absorbed.
